Taco Salad April 21, 2012

Had this for dinner last night with my good friend Katie… what a great way to end the workweek!

Ingredients:

½ lb. lean ground beef

¼ medium onion, diced

2 tsp. minced garlic – there are jars of ready-to-use minced garlic available at the supermarket

2 tbsp. taco seasoning mix

¼ tsp. hot sauce

½ head of lettuce, shredded

5 oz. corn chips – or in other words, half of a 10-oz. bag available in convenience stores and most supermarkets

½ cup grated cheddar cheese – I recommend a Mexican blend

1 tomato, diced

Procedure:

                  In a large frying pan on a medium heat setting, brown the beef. In the last few minutes of browning, add the onion and garlic. Drain the beef of excess fat. Add the taco seasoning and hot sauce to the beef mixture, and mix well.

Meanwhile, place the lettuce on serving dishes. Top with the meat, cheese and tomato, and right before serving, add the corn chips.

As with tacos, fajitas and burritos, this salad goes great with salsa, guacamole or sour cream.

Serves 4.
